Gorgonzola Chicklen


4-6 Boneless skinless chicken breast sliced length ways

4-6 Portabello mushrooms (the smaller ones) sliced

3-4 Fresh tomatoes cut in chunks

3-4 Pieces of Garlic Chopped fine

1    Chunk Gorgonzola cheese (3-4 oz. or more)

1/2 Cup white wine (your choice)

1    Can Chicken broth

2-3 Tablespoons of Basil or use fresh to taste

1    Teaspoon Lemon Pepper (if you have it)

Extra Virgin Olive Oil





  1. Slice chicken breast length ways and pound each piece with cooking mallet a small bit to tenderize
  2. Brown each piece until almost done..set aside
  3. In same pan add garlic and chopped tomatoes and sliced mushrooms and cook a slite bit
  4. Add wine and chicken broth
  5. Crumble gorgonzola cheese into the pan and add all the rest of the ingredients.
  6. After all is cooked  add the chicken back in and cook a few minutes till chicken finishes cooking
  7. Add soom more olive oil to jazz it up a bit
